Weekly Yumminess.

Charles Darwin once said:
"A man who dares to waste one hour of time has not discovered the value of life."

I feel as though the Mulick family has done Darwin proud recently.  Between leaving town, birthday celebrations, and many family outings (all while trying to keep a nap schedule for the Feesh), we've been running ourselves ragged. Oops, I don't think I can count our 11:00 PM arrival back into KC last night would be called "keeping schedule," but hey.


"Mom, stop making excuses. Just get back on the ball."

  Let's see if I can get back on this WY wagon for at least two weeks in a row, shall we?
 
Anyway, while the WY column has been MIA lately, I must still admit that my Pinning has not suffered too much, for I once again have found Pinterest inspiration for WY this week. 
 
(Hopefully, Charles Darwin doesn't consider Pinning a waste of time. I'd be deep in his bogus bag. I'll have you know, Mr. Darwin, that Pinning has encouraged my evolution into the realm of green cleaning. How's that for survival of the fittest?)

Monday: Out of town
Tuesday: Mediterranean Tuna Sandwiches
Feesh and I are on our own tonight.
Wednesday: Quinoa Burrito Bowls 
This is so much fun! And so healthy! Who needs Chipotle? Ok, maybe I still do. But what a great veggie option! I'm sure you could add meat if you are so inclined. We added avocado, greek yogurt, and a mixture of chopped tomato, lime juice, and fresh cilantro. Tortilla chips are great on the side.

Mother's Day- A Family Affair

Sometimes I miss teaching- the planning, the collaboration between colleagues, and, most of all, the gratification of seeing the leaps and bounds students have made cognitively, socially, and emotionally.  Especially at this time of year, when teachers are wrapping up a (hopefully) wonderful year. 

I get nostalgic. I start to wonder if it is time to jump back into the world of elementary learning and life. Our plan is to have a second child (God willing) and head back into the workforce when Felicia starts kindergarten- pay for only one kiddo in daycare, ya know? And I really want to be home those first several years of our children's lives.  And yet, I still find myself yearning to plan new lessons and challenge myself for the class to come next year.
However, Mother's Day gave me some "reflective" time think about my conflicting feelings.


My reflecting brought me back to a piece of advice my sister gave me back when Felicia was a newborn and my colleagues were preparing for another year of curriculum, grading, duty-planning, and sticky jam-handedness.  She told me that staying home with the Feesh would be the most important teaching job I would ever have-that I should take advantage of the situation and be grateful I get the opportunity to do so. 

I know that the stay-at-home-mom (or dad!) life is not for everyone. Each parent has to decide which path is best for them and their family, and many times that is to have a two-income household. Parenthood is certainly hard no matter which way you slice it. But for now, I have renewed in myself the concept of stay-at-home mothering. And I'm excited for what is to come now that Feesh is getting older.

 Anyhow.

I got to celebrate being a mama yesterday with my wonderful husband and daughter.  I enjoyed sleeping in until 10:00 AM and went downstairs to find the makings of homemade whole-wheat buttermilk waffles waiting for me. We then traipsed outside and enjoyed lots of water play and bubbles out in the back yard.

 
 
 
 
 
 So fun watching bubbles!
We also enjoyed an evening picnic with sandwiches and fruit at a nearby lake. It was very relaxing and Felicia had a lot of fun! We also got to talk to Grandma Klemz and wish her a very happy day!

Weekly Yumminess.

Looking at this week's meals, you'd think I didn't know it was spring. You'd think I didn't know about all the amazing produce making its way into the local Farmers' Markets. I was even there at the City Market downtown on Saturday to witness it!







 But really, Crock-Pots are not just for winter, people. That thing is amazing- all hail.
Monday: Happy birthday, Dan- thanks to your wonderful wife for the tasty meal/party!
Tuesday: Green Goddess Grilled Cheese
Do you have any kale waiting for employment? I do, and this is yummy. I have prepared this without the anchovy and doubled up on the avocado by blending the second half with the pesto. This is seriously tasty!
Wednesday: Crock-Pot Carnitas Tacos
Taco kick lately. Great way to use up 29-cent Aldi avocados.
Thursday: Spaghetti and Meatballs
Friday: Concert night! Ladies' night :) Thanks, Hubby.
Thought it would be fun to hang on the patio for my first Mother's Day.
