Weekly Yumminess.

 The best laid plans always seem to unravel. Cooking this week? Well, it was kind of a joke. We really didn't do too much of it. Between yummy late lunches (some lovely friends hosted a lunch, and we also met said friends for lunch another day at a neighborhood Thai place), going out one night, and, um, pure laziness, we didn't stick to last week's plan too well. (Laziness equates to frozen pizza.) We only got to the BLATs and the Crispy Tliapia Fishwiches. We didn't even get to date night.

Here's to trying again. Especially for date night.

Thursday: Green Grilled Cheese
Friday: Veggie Pizza on Whole-Wheat Crust

Eleven Months.

Felicia is eleven months old today. Too. Stinkin'. Fast. 

While she'll always be my "baby" (cue the chirpy Mariah Carey music), I am intent on savoring this last month of official "babydom."


 
 


While I may want to linger in this last stage of "babydom," Feesh may be indicating she is ready to grow right on up.  Especially if making out with a mirror is any indication.  A little too early for that, babe.

Weekly Yumminess.


Felicia has been teething a lot lately- she's working on her third tooth. Teeth are important to her, you see, for getting the cap off pop bottles when Dad tells her he won't open it because she can't have pop yet. And, it feels good to gnaw on it, anyway.


"Daddy, may I have some pop?"
(It's called pop. P-O-P. Not soda. Just deal.)

"'Now let me get this straight..' you said no, Daddy?"
 Felicia takes the negatory quite well, and dwells with a smile on her next move.

Goes full throttle for it. I have to say, I admire her spunk.


Anyway, I decided that my sweet little squirt (I make terrible jokes, I know) needed more productive ways to use her existing teeth and soothe her aching gums. So we busted out the old blender and used up some going-ripe-so-ripe-almost-beyond-repair strawberries, an avocado, and bananas.We blended up all this delicious fruit into a smoothie with some skim milk. After partaking in the deliciousness, we froze the leftovers in awesomely shaped silicone ice-cube trays. Voila! Teething and nutritious deliciousness.  I made a second batch after quickly demolishing the first batch, this time using strawberries, blackberries, and yet another avocado (adds a delicious creamy texture without adding yogurt).  Add a few splashes of skim milk and we were ready to freeze our next batch. And I got a picture this time:


Just tell me you wouldn't be singing to yourself, "Put the lime in the coconut, drink them both together..."

Anyway, Felicia loves them. Success! And she eats nutritious avocado (a dislike in her book) without even knowing it. 
 
"Such a silly woman..."

I know I always say this, but don't skip the lemon (or perhaps add lime if you are feeling inspired by Harry Nilsson). We love this recipe! If you don't like mayo, a giant spoonful of plain greek yogurt is delicious!
Tuesday: Green Goddess Grilled Cheese
Did not get to this last week.
I found this recipe in an issue of Food Network magazine and it pretty much uses just basics from your food pantry.
Thursday: BLAT Sandwiches
Avocado is the perfect addition to the classic sandwiches.
Friday: Crispy Tilapia Fishwiches
Saturday: Mini Ham & Cheese Quinoa Cups
Making these delicious little bites again. So frickin' great.
Sunday: Mommy & Daddy Date Night :)

Weekly Yumminess.

 Feesh and I had Saturday and Sunday to ourselves. We enjoyed baking and cooking together (okay, Feesh just ate the final products- so Little Red Hen of her). I baked my first recipe from King Arthur's Whole Grain Baking. The recipe was for Sour Cream Muffins, and I added blueberries to them. Yum! We also made Mini Ham and Cheese Quinoa Cups. These were awesome! They make a great dinner or snack, and are easily customizable.  Put these on your "to try" list. You won't be sorry.

We are cooking up mostly favorites this week but Tuesday and Wednesday are new recipes.

Monday: Veggie Pizza on Whole-Wheat Crust
Sounds simple and delicious- RR calls it a 'healthier alternative to Coq au Vin.'
Going for this without the anchovy. Sorry, not feeling brave.
This is really tasty! I'd do low-sodium chicken broth and omit the extra salt dashes so as to let the spinach and goat cheese flavors stand out more.
Friday: Buffalo Chicken Tacos
Saturday: Goin' out with the hubs.
Sunday: Gordita-Style Tacos
Step 1: Make a crunch taco. Step 2: Wrap it up in a soft shell. Step 3: Eat. One of Taco Bell's more...interesting ideas. But, I do have to say that I was actually inspired at my girls' night out Friday during dinner- Gordon Biersch served up their tacos like this. Very cool.

Weekly Yumminess!

It has been a very busy couple of weeks in the Mulick household!  We've been out of town two weekends in a row, which meant that regular grocery shopping and meal planning kinda went out the window. You can tell this is what has happened when your normally packed veggie crisper houses these items instead:
That would be the pop from my junk food run several weeks ago. And beer. Luscious beer.

We are, thankfully, back to normal now...

...and back with a vengeance this week. And we started it out deliciously tonight.  This is what James gets when he complains I'm not making enough meat dishes.

4/10: Penne Pasta w/Leftover Meatballs & Homemade Marinara Sauce
Looking forward to trying these.
Make sure to get out all the lumpy sections on this crust. It is best thin. And then, whoa! Very yummy! I also use fresh mozzarella and replace tomatoes with my fave veggies. This recipe is best with a tomato sauce instead of tomato slices.  Just blend up a can of diced tomatoes along with your favorite seasonings and some olive oil if you don't like making your own pizza sauce.

Saturday and Sunday are Daddy's days out. He's taking the new motorcycle to Iowa for its first long trip.

Rebels in the Making.

I just have to share...
that my family is turning to a bunch of rebels!

We hosted the Bruck family (minus Adam) over Spring Break this year.  We had a great time- this vacation included a trip to the zoo, some of KC's best casual restaurants, a trip to the park, and some motorcycle riding! Even for the Bruck mama...


 Felicia sure enjoyed watching Maggie ride. She just coos whenever Mags is around.  Sorry, babe, you got a lot of years before you get to ride with Daddy!
