Monday: Basil Risotto
This recipe frequents our stove often. We omit the sage- adds too many flavors to what should be a simple dish (IMHumbleO).
Tuesday: Carribean Jerk Salmon Bowl
This is a great recipe. The spices are perfect and I love the combo of salmon & mango. And this goes without saying, but avocado, too. It's an obsession, I tell you! Try replacing the rice with quinoa for an extra jolt of healthfulness. I also put a bit of Greek yogurt on the top to stand in for the sour cream I must always seem to need with spicy food.
Wednesday: Date Night!
Heading to our favorite nearby haunt (read: bar) to get some of the best pizza in town. Sans child.
Thursday: Slow-Cooker Lime & Cilantro Chicken
Got some cilantro to use up. Thanks, Pip and Ebby!
Sunday: Out of town
