Yumminess for the Week.

This recipe is definitely one I'd recommend trying if you are an enchilada fan and do not have a dairy allergy (lots of sour cream and cheese). I made no substitutions- it is so easy and ingredients are very common- I had all on hand except green chilies- you can find these in the Hispanic food aisle at Hy-vee or where you shop. 
    Tip: Do not- I repeat, do not- skip the broil step. It really adds another level of awesomeness. 
    Sweet Potato Risotto
    This came from a baby food website, so my hubby was skeptical of it. Holy cow, it is AMAZING! It calls for white wine, but you can substitute white grape juice. We stuck with the wine since the alcohol cooks off fine. I thought the sweet potato would overpower it, but it doesn't.
      Tip:You only need the sweet potato dice (for puree), not the 1-inch chunks. I wanted the rice and onion to cook on its own without the 1-inch chunks. OR, you can roast the to-be-chunked potato with the other and saute those chunks with the onion and garlic. Then, remove before putting in the rice and top the finished risotto with it later.

      We love using fresh mozzarella and making our own sauce with canned diced tomatoes. Saute up some mushrooms to throw on along with basil. So good!! Hopefully have a pic to post next week.
      Wednesday: Dijon Chicken Linguine
      I use baby bella mushrooms in this recipe instead of chanterelles.
      Thursday: Not sure on plans- may be grabbing something and going. Taking a baby-wearing class with my friend, Mel, who is expecting her first baby in a few months.
      Friday: Parmesan-Crusted Tilapia 
      Never got to this last week.
      Saturday: Chicken & Cheese Tostadas
      Sunday: Soup & Sandwiches
      Going with something quick- we are attending a recital of some friends this evening.
