Yumminess for the Week.


Simple Winter Yumminess.
This is not really even a recipe, it's so stinkin' easy and delicious.

 

This dish is another great way to use up any produce you may have around and need to use up.  All I did here was dice up some russet potatoes and fried them until they were crisp-tender in oil.  James spiced them up with a rub from our favorite barbecue joint, but you can use whatever you prefer. Potatoes are so versatile when it comes to spicing.  I sliced up some carrots and diced up onions and threw them in a separate saute pan to add to the potatoes at the end.  The meat, since it is already cooked, went in after I'd tossed all other ingredients together. You can see in the picture that I added a little shredded mozzarella to part of the meal- I was the only one who wanted to add cheese. It was a tasty addition! I bet shredded parmesan would have been even better.

This looks easy and tasty! I found it on Pinterest and got all excited because I always have all of these ingredients on hand. I'm going to top some toasted multigrain tortillas with this yummy-sounding concoction.
