Weekly Yumminess.

It was a dark and rainy night.  A night to be sinful, a night to be decadent...

I'm talking about cooking, people. Get your minds out of the gutter. (You know who you are. And I'm not talking about James.)

Last Monday evening, I had originally planned on making a simple recipe entitled Brown Butter Gnocchi with Spinach and Pine Nuts. Simple enough, even nutritious sounding, right? Nope. Apparently the gloomy, rainy weather made me feel like using up my heavy whipping cream, butter, and parmesan cheese. All at once. I drowned it, folks, drowned it in luscious homemade alfredo sauce. 

Everything in moderation, right?



I wish I had taken a picture after dumping the butter, heavy whipping cream, and mounds of grated parmesan cheese into the saucepan.

On a healthier note, I made a big pot of Sweet Potato and Black Bean Chili (from this awesome book) so Felicia and I could have a yummy and nutritious lunch at the ready. We topped it with shredded cheddar, Greek yogurt, (such a great sour cream replacement) and chopped green onions. Deliciousness.

We enjoyed some Thai food this week, and ate separately last night tonight (James had a softball game) so that left us a meal from last week to still make. We left out the taco salad, so you'll see that on the week's list again.

Wednesday: Sliced Chicken w/Chunky Mushroom Gravy
Thursday: Tuna Sandwiches w/Homemade No-Knead Bread
Friday: Out of town
Saturday: Out of town
Sunday: Out of town

What happens when you leave me home alone to my own food devices? Before I tell (admit to) you, please know that I went into serious veggie overload after my delicious Thai stir-fry on Saturday. So my normal healthy eating habits were kicked out the window when I made an unplanned grocery store run Saturday night. The purchases included my "dinner" last night: Nachos and cheese, a raspberry Pop-Tart, and a Coke Zero.POP! In my house. Yep. Oh, sweet caffeine.
